This Ebematsu Japanese Cook knife strikes the right balance between a Japanese style chef knife and a western one. Although the shape of the blade and handle is typically Japanese, the handle material and attachment is influenced by traditional western knifes. The manufacturing process of this kitchen knife utilise the same technology of Japanese swords to give shape to the stainless steel blade.
