Tosa Ryu Cutting Board

This handmade cutting board is made of Shimanto cypress from Kochi Prefecture, in Shikoku Island. Shimanto cypress is slightly scented and more oily than other cypress species. This makes it more resistant to any water damage that could appear over time, and has also natural antibacterial properties. This type of wood is soft on the knife blades as to avoid having to sharpen the knifes frequently and has been used for making chopping boards in Japan over centuries.
